Complex aromas showing blackberry, violet, black plum and briar rose. The palate is fluid and mouth filling. Fine gentle tannins give the wine fibre from mid palate through to a long and persistent finish. The flavours are a rich, slightly chocolate. Notes of blackberry, black plum, briar, and a little barrel char.
The wine was made by hand in small open tanks, without the addition of yeast, very little intervention but constant and diligent attention. After 12 months in French oak barrels (33% new) the wine was blended and returned to old barrels then allowed to settle through the cold winter months.
