Just three barrels of this wine were made, the fruit coming from the Sims 45 South vineyard in Gibbston, Central Otago. The grapes were hand picked and gently handled with minimal intervention throughout the wine making process. Natural, indigenous yeasts were allowed to complete the primary fermentation. A low sulfur regime was followed and the wine has not been fined or filtered so some light sediment may be expected after time.
The wine has a complex nose, earthy with dark fruits and hints of mushrooms and truffles. The palate is elegantly structured with fine tannin's and good length.
